What Is Gelatin Made From?

You may have heard that gelatin is made from animal parts- which is why vegetarians won't eat it. In fact, this is true and a big part of what gelatin is made from is the parts of various animals.

When you are eating jelly or jello that has gelatin in it, you might want to know exactly what gelatin is made from.

  • Gelatin is a material made out of protein that is derived from the entrails and intestinal tissues of animals such as cows, pigs, and horses.
  • It is also made out of the collagen that is extracted from the animals’ bones and connective tissues that lie between muscles and bones, connecting the two tissues.
  • Animal hides, or skins, are also used in the gelatin making process because of the high collagen content in the materials. This collagen material is one of the most effective components in a gelatin product out of all of the ingredients that gelatin is made from.
  • This substance, after it is dried during the boiling and extraction process, is available to users for making gelatin-based food products.

Gelatin is available in powder, sheets, and granules that can be boiled or added with wet ingredients to take on a gummy or pliable texture.

Changes to the Ingredients

In recent manufacturing techniques, there have been some changes to the answer to what gelatin is made from. 

  • Today, gelatin may also consist of the byproducts that are generated from the processing of fish and seafood products.
  • This switch is based on the fact that using seafood doesn’t result in the same religious infractions as using beef or pork products.
  • Beef and pork products are strictly forbidden for consumption by practicing members of certain religions.
  • The method of using fish and seafood usually raises the prices of the gelatin products which are created because the amount of collagen that each fish contains in its byproducts is more limited than the amount of collagen found in things like cow hide.
  • To use the larger animals’ byproducts simply makes the process of gelatin making more efficient. 

Where Is Gelatin Found?

Now that you know what gelatin is made from, you may wonder where gelatin is found.

  • Gelatin is found most commonly in obvious places such as gelatin-based products. This includes Jell-o products. Jell-o is boiled and then added to cooled water, which initiates the chemical process that results in the congealing of the substance. This results in a food texture that is pliable yet stable, and which is referred to as gelatinous.
  • Any candy that is purchased that is considered a gummy candy, such as gummy animals or gummy worms, are considered gelatinous. These products generally utilize gelatin as their means of keeping shape while remaining soft in texture. 
  • When used in home kitchens, gelatin is often used in making jellied products, jams, or even homemade fruit rolls, or “roll-ups.” These products can be made by adding the gelatin to a mixture of natural products, such as fruits and sugars, that have reached the proper temperature. The warm ingredients activates the gelatin so it can be incorporated into the mixture. Then, at the boiling point, a cooled liquid is added to the ingredient mixture to activate the collagen product. This results in a congealed, stable, yet pliable food product, while also allowing the individual flavors of each ingredient to remain unaltered.
